Coleslaw with root veggies

Jicama is a low-calorie vegetable that is high in soluble fibre, antioxidants, vitamin C, and minerals. It is sweet tasting and low on the Glycemic index, making it great for diabetics. Beets help fight coronary artery disease and stroke, lower cholesterol levels and help anti aging. These raw veggies are a great addition to coleslaw.
